Pickling: Acid protects the increases of bacteria and save food. Since vinegar is a mild acid, it forms a thin layer around the food during the preservation to inhibit the attack of bacteria. This is called pickling.

The pickling procedure will typically affect the food’s texture and flavor. It is the process of preserving or expanding the lifespan of food by either anaerobic fermentation in brine or immersion in vinegar.
