The preservative which are used to preserve the food fresh and protecting from the microorganism and pollution is called the food preservative.

Chemical structure and characteristic of vinegar: Vinegar is a 6-10% aqueous solution of ethanoic acid or acetic acid. It is prepared from ethanol (6-10%). Ethanol is oxidized by oxygen in presence of micodarma acete bacteria at 35°C then it is converted into 6-10% aqueous solution of acetic acid.
