Define Zymase with Functions

The enzyme which can convert starch to ethyl alcohol through fermentation is called zymase. It is the active alcoholic fermentation enzyme of yeasts. Zymase is a complex of enzymes that cause glycolysis.

(i) Zymase is used in preparing Alcohol.

(ii) It is used to prepare bread in basketries.

(iii) Obsolete term for a mixture of enzymes.
