Amylase: The enzyme that modifies amylose to form maltose is said to be amylase. It an enzyme, found chiefly in saliva and pancreatic fluid, that converts starch and glycogen into simple sugars.

The big part of starch is amylase. In some starch, the whole part is m of amylase. A digestive enzyme produced largely by the pancreas and salivary glands that converts starches to sugars. Abnormally high levels of amylase in the blood or urine may be found in patients with inflammation of the pancreas or salivary glands (mumps).

Types: Amylose is of two types:

  • α- amylose
  • β- amylose

Functions: The carbohydrate or starch food we take is digested by amylase enzyme;

  • Amylase → α- amylase → Dextrine
  • Dextrine → β- amylase → Maltose.

Amylase is the digestive enzyme needed to digest carbohydrates. Carbohydrates in food are an important and immediate source of energy for the body.
